I got my new Smoker assembled tonight. After a good cleaning, it'll be ready for its first bbq this saturday. Pulled pork and chicken.. Mmmmm. I plan on doing a large blog update this weekend.

I do a bit of smoking during the summer... and had the same problem last year. The best solution I found was to add a separate coal pan under my water pan, that way it was using it's own heat source, and keeping the water at a more stable temp. Still had to add more water every hour, though...

Thanks for the suggestion. I made some modifications to my smoker last weekend, but I haven't had a chance to try using it again. I added a new thermometer, a damper to the bottom to allow me to control airflow, and 3 bolts to the charcoal pan to place a grate on so the ash doesn't choke out the air flow.

I was also using royal oak lump charcoal.. turns out the lump charcoal was burning very hot and fast, especially since I couldn't restrict air flow. Also, the lump really added a strong smoke flavor. Way too much. So I'll be trying out kingsford blue briquettes next time. Next time I use the smoker, I'll take pictures to upload so you can see what it looks like.

I hate UPS. I ordered a new smoker off of Amazon.. where did my package get delivered to? My neighbors porch.. and the box looks like it was kicked, opened and retaped closed. The grill is fine tho, but I bitched at UPS.

The only thing I can think of is my Grandmother didn't hear the knock at the door when he delivered it so he decided to leave it with our neighbors instead of leaving it by the door like he usually does (must of been a new postal driver). He better not fuck up with the next one because I will be royally pissed if my rightstuf order isn't here when it's supposed to be.
Sadly you can't be nice with them anymore, they take it as a sign that you'll let them do whate...

Yep, they force people to be asses to them, because if we're not, nothing gets fixed. The last time I called and b*tched at UPS was a year ago when they left the 26 inch HDTV I ordered on my neighbors back porch. That tv was shipped in its original package. Aside from the mailing address on it, my neighbor would have thought the TV fairy came and dropped off a present for them. After that, they found my house again for the next 6 months.
